This recipe converts the classic “French Toast” breakfast into a healthy and balanced meal. If you are looking for something healthy that hits your sweet tooth then you’ve found the right recipe!

|Prep Time: 5 mins||Cook Time: 10 mins||2 Servings|
- Eggs (4, beaten)
- Vanilla extract (1/2 teaspoon)
- Salt (a pinch)
- Whole wheat bread (4 slices)
- Blackberries (1 cup fresh)
- Pecan halves (20, chopped)
- Maple syrup (2 teaspoons)
Whisk the beaten eggs, salt, and vanilla in a large bowl. Soak the slices of bread in the egg mixture.
Coat a nonstick frying pan with cooking spray and cook the soaked bread slices over medium heat for 3 minutes, until the underside is browned. Flip and cook for another 3 minutes.
Serve with maple syrup, pecans, and blackberries on top.
